Ojingeo-jeot — Squid · mild seasoning

Ojingeo-jeot is squid cut into fine strips, salted and then tossed in seasoning. It belongs to the same seasoned family as nakji-jeot, but it eats differently. Where long-arm octopus is chewed in chunks, shredded squid works its way in between the grains of rice and leaves an even chew. That property is why it turns up so often in lunchboxes and bibimbap. Turn the heat down, though, and it softens easily — keeping the texture while making the seasoning milder is the hardest part of this item.
