Changnan-jeot is the intestines of Alaska pollock, salted and cured. Where myeongnan uses the roe sac, changnan uses the intestines beside it, and two different jeotgal come out of a single fish. The crisp, snapping bite is very nearly the whole point of this jeotgal, so how it is trimmed and how far it is cured decide the result. Once it softens, there is no reason to call it changnan-jeot. The lower the salt, the more easily the tissue gives way, which makes keeping the bite the baseline for this item.
