Nakji-jeot is a seasoned jeotgal: long-arm octopus chopped small, salted, then tossed in chili seasoning. It is not cured for long, so the springy texture of the raw material stays, and it sits closer to a meal than the other jeotgal do. People say it empties a bowl of rice because the heat and savory depth of the seasoning come before the salt. A seasoned jeotgal is easier to handle the saltier it is made — but then it is hard to eat more than a mouthful. Bringing the salt down to a level you can eat every day is the task for this item.
How to eat it, and what with
One meal of 50 g makes a side dish on its own, and what it sits beside changes what it does.

A spoonful over white rice
The spicy seasoning clings to the grains, and one side dish finishes the meal.

Mixed rice and gimbap
Mix it with sesame oil, or roll it into gimbap. It goes straight into a lunchbox.

With rice on a sheet of toasted gim. The gim holds the heat down and the finish stays clean.
