Korean-produced live abalone cured in bamboo salt — the premium tier for gifting and export

Jeonbok-jeot is not a common jeotgal. Abalone is expensive, so it was usually steamed whole or eaten raw, and rarely salted and cured. This item is therefore closer to a new design than to a revival of tradition. The flesh is dense muscle, so the cure does not penetrate evenly, and cured too long it loses the very chew that justified the price. Keeping the salt content low with bamboo salt and the curing time short — leaving the texture of the abalone while drawing up only the savory depth — is the direction of this item.
