Observations

• Shell opening progressed uniformly through the pressurization phase
• The temperature rise at handover to the shucking process stayed within the chilled range
• No damage to the flesh was found within the scope of visual inspection

Even under identical conditions the result changes with the size distribution and the intake condition of the raw material, so for a new raw material we recommend a small pilot run first.
