Octopus turns rubbery when cooked, so we steep it raw — this one is all texture

Octopus is unforgiving: a few minutes past the mark and there is no going back. Boiled too long, the muscle fibers contract into rubber, and nothing will make them tender again. That is why muneo-jang, soy-marinated octopus, is steeped raw. In exchange, the legs are thick and the seasoning needs a day and a half to reach the center — and the risk that comes with eating it raw builds over the same hours. Of the four items, this is where time and safety pull hardest against each other.
- East Sea octopus
- Landed at Yeongdeok and Pohang. We select thick legs and heavy flesh.
- Leg thickness
- It sets how long the seasoning needs to reach the center. This is the second-longest steep of the four items.
- Ginger
- It holds down the aroma particular to octopus. With whole peppercorns, it leaves a hot edge at the finish.
- A day and a half
- 24–36 hours. The window that avoids a salty surface over a bland center.

- A single piece takes a long time to chew, so the drinking keeps pace. That is why anju is this item's main channel.
- The marinade, not chogochujang
- You need nothing to dip it in. The seasoning is already inside the flesh, and a sauce on top would only mask the texture.

WHY HPP
Boil octopus a moment too long and it turns to rubber. So it is steeped raw — but the seasoning needs a day and a half to reach the center of a thick leg, and risk builds over the same hours. High pressure uses no heat, so it pasteurizes without setting the muscle fibers: for this item it is less an alternative than the only method.
