What jeotgal actually is

A fermented preserved food made by salting and curing fish and shellfish. Before refrigeration it was a way to keep protein from spoiling, and over time it became more than preservation — a way of cooking that builds savory depth.

As the protein in the raw material is broken down into amino acids by its own enzymes and by microorganisms, a depth appears that the raw ingredient never had. Only three conditions bring that change about.

The three things that make jeotgal

  • Raw material

    Shrimp, oyster, pollock roe, anchovy, long-arm octopus, squid, pollock intestines, abalone. Which raw material is used becomes the name of the jeotgal.

  • Salt

    A salt content that blocks spoilage bacteria and leaves fermentation. The amount of salt and the size of its grains set how fast it cures.

  • Time

    From a few days to three years. The one condition protein needs in order to turn into amino acids.

From royal wedding gifts to methods written into cookbooks, from an ingredient in kimchi to a regional specialty — jeotgal has changed shape alongside Korean food culture.

  1. Three Kingdoms

    The first record: hae (醢)

    Hae (醢), the word for jeotgal, appears among the wedding gifts of King Sinmun in the Samguk Sagi. Salting and curing was already part of a royal gift.

  2. Joseon

    The method settles into cookbooks

    Jeungbo Sallim Gyeongje, Gyuhap Chongseo and others set down how to cure each species and how long to mature it. This is when jeotgal settled in as a side dish kept on hand.

  3. Modern era

    Kimchi's partner, a regional specialty

    As saeu-jeot and myeolchi-jeot became essential to kimchi fermentation, jeotgal towns such as Gwangcheon and Ganggyeong grew up.

  4. Today

    Reduced salt + non-thermal pasteurization

    A bamboo-salt blend brings the salt content down, and high pressure (HPP) controls unwanted microorganisms instead of heat. A generation with less salt and more safety.

What jeotgal left behind in Korea

Jeotgal was never one more side dish; it was the standard that set the seasoning of the Korean table. From the taste of kimchi to regional industries, there are things jeotgal built.

What it left on the table and in the regions

  • The standard that set the seasoning

    A savory depth that salt or soy sauce cannot give. Seasoning soups, greens and salads with jeotgal became a basic of Korean cooking.

  • The ingredient that completes kimchi

    Without saeu-jeot and myeolchi-jeot, neither the fermentation nor the savory depth of kimchi holds together. Much of what makes kimchi taste different from region to region comes down to which jeotgal was used.

  • An industry that built regions

    Producing regions known for jeotgal grew up, such as Gwangcheon and Ganggyeong in Chungcheongnam-do and Gampo in Gyeongju. Seasonal catches and maturation warehouses became an axis of the local economy.
